Galia Atik, 16, became a vegetarian when she was 11 years old. “I didn’t give up meat because of the taste, but out of moral principle,” says Atik, a student in New York City.

Atik has company: several of her friends gave up eating meat at the same time. And she’s come up with strategies in case she’s at a friend’s house or in a restaurant where meat is served.
